Couscous Salad

Recipe Ingredients

Oil
Onion 80 g
Peppers 120 g
Mushrooms 100 g
Courgette 100 g
Chopped parsley 30 g
Couscous 300 g
Chicken stock 300 ml
Halloumi cheese 225 g
Grated cheese 100 g

Method

On the oil sizzle onion,
Add peppers, mushrooms, courgette
Cook a bit
Boil chicken stock poor it over couscous leave it soak at least 5 min. Covered.
Add cheese to veggies {cut halloumi into small cubes}
Break couscous and mix it with veggie mix add parsley.
Season if necessary with salt, chilli optional.
