Coffee Cake
Recipe Ingredients
375g plain flour
1 1/2 tsp baking powder
1/2tsp baking soda
1/2tsp salt
4 large eggs
300g caster sugar
6oz butter
2oz vegetable oil
1 1/2 tbsp coffee, dissolved in a little hot water 8oz buttermilk.

8oz butter
400g icing sugar
1 tbsp coffee dissolved in a little hot water 1ox double cream.
Method
160 fan, 180 c, Gas 4
Whisk flour, bp, baking soda and salt in a bowl.
In another bowl beat butter for 2 minutes.
Add oil and beat for 1 min
Add sugar and beat for 3 minutes.
Add eggs and beat till smooth.
Add coffee and beat.
Gently fold in half the flour, then half the buttermilk. Repeat with the rest.
Pour into 2 x 8in cake tins and bake for 25 to 30 mins.

Beat the butter till fluffy.
Add half the sugar and beat. Add the rest of the sugar and beat till combined. Add the coffee. Beat.
Add the cream beat till lovely and smooth and fluffy.
